Yellowtail Sushi to Open at Bellagio

Those seeking a sushi fix will have a new option on the Strip this summer when the Light Group opens Yellowtail Sushi Restaurant & Bar at the Bellagio.

yellowtail restaurant logoAward-winning chef Akira Back has created a blend of traditional and modern Japanese cuisine based on seasonal fish and ingredients flown in daily from around the world. For those with an adventurous palate, a multi-course Omakase tasting menu will allow guests to sample Back’s best creations of the day.

Signature items on the regular menu will include Toro Sashimi with caviar and microgreens; Maine lobster Carpaccio with sweet onion and cilantro; Big Eye Tuna Pizza with shiso; and Grilled Walu, a Hawaiian butterfish, with shiitake mushrooms, pearl onions and tosa sauce (a mixture of soy sauce and bonito-flavored vinegar).

Non-seafood options will also be available, such as Jidori Chicken (farm-raised and grain fed) prepared with sweet Japanese garlic, potato puree, baby root vegetables and teriyaki. Kobe beef fans will also be taken care of with menu items incorporating Washu beef (a domestic breed of Kobe), along with Japanese Kobe beef and Washugyu beef offered in tenderloin or rib-eye cuts, all served in three different preparations – seared in hot oil, marinated in balsamic teriyaki, or cooked using the traditional tataki method.

Back, who is also a professional snowboarder, has worked with industry greats such as chefs Nobu and Morimoto, and says his menu is designed around his culinary philosophy “to bring happiness to my guests by creating a memorable experience through food.”

To complement the menu, Yellowtail will offer an extensive sake collection, along with an exotic selection of wine, beer and signature cocktails, like the yuzu-infused Peridot.

The 180-seat dining room features a wood and stone decor, with screens composes of woven twigs set inside antique brass frames, while the outdoor patio area will offer diners a view of the Bellagio’s famed fountain show. A 30-seat private dining room, 30-seat intimate lounge and 18-seat bar complete the layout of this intimate new venue.

Once open, the restaurant will offer lunch seven days a week from noon until 3pm. It will then serve dinner starting at 5pm, ending at 11pm Sundays through Thursdays and until midnight on Fridays and Saturdays.

Yellowtail replaces Shintaro, Bellagio’s former fine dining sushi restaurant.
