Diablo's Cantina Lends Spice To Monte CarloThe Light Group sure is busy. In addition to opening the new Bare Pool at the Mirage this Spring, they have plans to spice up the Strip a little with the opening of Diablo’s Cantina.

The 10,000-square-foot multi-level entertainment complex will be situated at the front of the Monte Carlo, with prime Las Vegas Blvd exposure. The first floor will contain the main dining area, with a bar and lounge, that can be accessed either from an outside entrance or via the resort’s casino. The second level will house a stage for live music or weekend DJs, as well as an open-air bar. Both levels will feature an outdoor patio area for prime Strip viewing.

As the name suggests, the food offerings will be of the hot-n-spicy Mexican variety. Menu items that caught my eye were the Spicy Grilled Shrimp Quesadilla, French Dip Burrito and The Diablo Death Wings (spicy chicken wings served with a smoked jalapeno blue cheese sauce).

To wash them down, Diablo’s offers nine different margaritas and a selection of other specialty drinks from martinis to mojitos. And what Mexican eatery would be complete without a killer tequila menu? Try 32 different types and if you can’t make up your mind, try one of the five samplers, or as they call them “Family Flights,” in which you can try a blanco, resposado and anejo variety of one brand for one combo price.

Representatives from the Light Group say they are going with a mixture of “Old World” Mexican coastal cantina mixed with amenities guests come to expect in a Vegas hotspot, such as plasma screens throughout and roaming “tequila vixens.”

“Fueled by the combination of great food, high-octane entertainment, an open-air design in the center of the world’s most exciting location and, of course, tequila, Diablo’s will be like Spring Break year-round,” says Oliver Wharton, The Light Group’s director of Restaurant Operations.

As you can see from the artist renditions below, the venue will certainly add a different look to the front of the Monte Carlo.

The Light Group plans to open Diablo’s Cantina in September.
